If you love gummy bears and other jelly lollies, then this recipe is for you!
Homemade jellies with gelatin are a wonderful replacement for those additive and refined sugar filled jellies.
Gelatin is derived from collagen and contains amino acids which are great for our health, especially gut health. Glycine helps repair the gut lining by strengthening and protecting the mucous membrane layer.
Some of the health benefits are improvement of the digestive function, strengthening of the immune system and reduction of inflammation.
SERVINGS
20 small jellies
INGREDIENTS - Option 1
1 tbsp grass fed gelatin
2 tbsp filtered water
250 ml fruit liquid of choice (fresh fruit or smoothie)
2 tbsp coconut cream
1-2 tbsp rapadura sugar (or honey / maple syrup)
INSTRUCTIONS
Mix gelatin and water in small bowl and allow to sit until it becomes soft like apple sauce.
Gently heat 250ml liquid of choice (e.g. apple, mango, orange juice) on the stove until warm.
Add gelatin, sweetener and coconut cream and stir until dissolved.
Pour into a glass bowl with (optional) additional fruit or into jelly moulds.
Refrigerate until set (about 2 hours) before turning out and serving.
INGREDIENTS - Option 2
2 tbsp grass fed gelatin
1/4 cup filtered water
1 cup of berries of your choice (fresh or frozen)
1/2 cup coconut water
2 tbsp rapadura sugar (or honey / maple syrup)
INSTRUCTIONS
Mix gelatin and water in small bowl and allow to sit until it becomes soft like apple sauce.
Gently heat coconut water and berries* on the stove until warm.
Add sugar and stir until dissolved.
Remove the pot, let it cool until slightly warm, and stir through the gelatin until fully dissolved.
Pour into a glass bowl or into jelly moulds.
Refrigerate until set (about 2 hours) before turning out and serving.
* pour the berry mixture through a sieve if you like it smoother
