Fermented Buckwheat Bread


Do you sometimes fancy some bread but know that your gut won't be happy if you have some?


Your gut will love this bread! Despite its name, buckwheat does not contain any wheat and is gluten free. It is high in minerals, antioxidants, fibre and can help control blood sugar.


This bread is easy to make, and you can easily freeze some of it to have at a later stage.








Ingredients:


4.5 cups of organic buckwheat kernels

550ml of water

Spices as you desire


Method:

  • Rinse kernels and put in a bowl

  • Cover kernels with water and add 2 tbsp of apple cider vinegar

  • Soak for approximately 12 hours

  • Drain and rinse

  • Add 550ml of water and blend until well incorporated

  • Put mixture in a bowl and cover with kitchen towel or similar

  • Leave to ferment for about 48 hours, depending on room temperature

  • Add 3 tsp of salt*

  • Pour batter into bread pan

  • Bake for 1 hour at 175°C

  • Let cool for 30 minutes and enjoy


Tips:


  • *Add other spices such as oregano or sundried tomatoes and sunflower seeds to add extra flavour

  • Freeze 1/2 of the bread for later
