As the first spring days start warming up the outside temperature, I start replacing my soups with salads. Today I used one of my favourite vegetables to make a yummy salad.
Fennel is rich in vitamins, minerals and antioxidants. Animal studies show that it is anticancer, antimicrobial, antiviral and anti-inflammatory. But what I like best about fennel is that it helps with bloating (that’s why you will often find it in my herbal gut tonic) and that it helps to balance oestrogen! Ladies, if you suffer from PMS, are in perimenopause or menopause – consider fennel! A study showed that fennel and vitamin E also worked very well for menstrual cramps.
If you are a gut health fan like me, use fennel regularly, especially to help with bloating and IBS. Eat it as a snack, cook it or make below salad recipe.
Fennel Salad Recipe
Ingredients:
1 Apple (Granny Smith or any other crisp apple
1 Fennel, bulb
30g Walnuts
2-3 Tbsp Olive oil
2-3 Tbsp Apple Cider Vinegar
1 Tbsp Honey (optional)
Directions:
Slice fennel & apple
Crush walnuts roughly
Combine apple slices, fennel, and nuts in a big bowl.
Dress with olive oil, vinegar, honey, and salt.
Ideas:
=> Add red onions or celery to salad.
=> Replace the apple with a pear for a different taste.
